Genuine ANZAC Biscuits

Hi all, I know this is not ready to eat, but they do count as rations :D
Just in time for ANZAC day (April 25th) my mother sent me some genuine ANZAC Biscuits.....

If you guys don't know the story about these little beauties, I will enlighten.

Back during the First war, Australian wives, mothers and girlfriends sent these to their menfolk as comfort food.
The basic ingredients of rolled oats, flour, desiccated coconut, sugar, butter, golden syrup, baking soda and boiling water make a tasty snack and are virtually indestructible (Useful for slow early 20th century travel and conditions at the front) I can attest to this as my mother cooks them in huge batches for my father, freezes them for indeterminate amounts of time and they are as good defrosted as fresh. When I am lucky enough to get some, they often sit in the tin for a month again with the same result.

ANZAC's are now a part of Aussie culture ( and I guess New Zealand culture) and are still found in CR1M's in a muesli bar form.

If any one wants a specific recipe, let me know and I will post it. (seeing Mrs Housil's baking I think she may do a good Job with it )

Hi Yowie...I've made these myself from a web recipie. They're great......my wife generally hates oatmeal type cookies but she likes these. Please post up your mom's recipie if you wouldn't mind.....i'd like to give her's a try. Thanks.....best, rich

Those look really good Yowie! I would not mind eating them one bit. I have a couple questions though; are they considered "digestive biscuits" and if not, what are the actual "digestives" and how do they differ? I wonder if your mother would be willing to let you share her recipe for these because they look absolutely mouth-watering! Thanks.

It seems like the overwhelming opinion is yes to the recipe. so here we go......
This will make about a biscuit tins worth ( about 300mm diameter and 100mm tall)

1 Cup Rolled oats
3/4 cup dessicated coconut
1 cup plain flour
1 1/2 Teaspoons Bi-Carb Soda
2 Tablespoons Boiling Water
1 Cup white sugar
1/2 Cup butter (approx 125 grams)
1 Tablespoon Golden Syrup

Mix all the dry ingredients together except Bi-Carb soda

Melt Syrup and Butter together in large saucepan
Separately mix bi-carb soda and Water together and add to butter and syrup ( Be careful this with froth very quickly)
Then quickly mix all ingredients together.

On a greased baking tray Tablespoon individuals sizes and bake at 200c for 20 mins (Vary for fan forced oven Mum still cooks with woodburning stove)

In the forty odd years mum has been cooking these for dad, she says none have ever come out exactly the same but dad and I can attest that none have ever been bad or close too.

If anyone needs better translation (Hebredian english is sometimes unique) or any other advice let me know otherwise good luck

I'm not sure if this is for another topic or not, but would these be considered digestive biscuits and if not, what exactly does that term refer to? I do realize that Australian customs differ slightly from the UK and certain terms may not have the same meaning. Thanks again
