What kind of harness are you using in the photo? I think I can make out a older style M-1956 winter canteen cover in the foreground. Is that correct?

I haven't identified it. Tomorrow I'll take a close-up of it and post it here. I found it at a yard sale a few years ago. I have two newer ones, both American. I also have a current camelback in American ACU. I want a Canadian hydration pack in CADPAT but I'd almost have to sell my car to get one. All of my web gear is American. I have a drop leg pack thats in MARPAT. I have a Canadian 3 day pack in CADPAT.

Yes, in your photo the canteen cover on the very right is what I think stick has in his photo. Very similar.

thats a regular USGI canteen in an artic canteen cover....

This is an USGI artic canteen...they are mostly from the 80's. I haven't seen the new issued ones, yet.

Green Beret SGT Rodney Allen (Co C, 2nd Bn, 7th Special Forces) carries an Arctic Canteen on an icy mountain during Exercise Brim Frost '81, Clear Creek, Alaska, Jan-Feb 1981.

Yes, everyone is correct on that arctic cover it's a cotton canvas one from long ago with a 1qt canteen in it. The previous pictures are really good examples, though on some occasions I have seen pictures of arctic canteens as far back as the 1970's and one example had one as far back as 1968. I'm not 100% sure of that. The only examples I can find out there are dated from the 1980's.
