I love the photos, NNF! :)

They really don't give you much duck meat in that entree, do they? Curious of the Fat, Carb, Protein ratio on that one.

The Mackerel looks like it must've had a somewhat strong flavor to it. Was it any different from canned mackerel taste?

Should be possible. I don't see why it couldn't be freeze dried and rehydrated cold. I have freeze dried raw beef, raw pork, and raw eggs - so raw fish seems doable to me. I doubt any of the big players would tackle it, but there are home freeze dry machines now for 3 to 4 grand - someone's gotta try it out eventually, heh.
