Hash Browns with Bacon

Had this for breakfast last week.. The potatoes tasted about the same as restaurant potatoes. Very small bits of bacon, but they added plenty of flavor . These would be better if they were fried up crispy. I added one pack of bacon flavor cheese spread to add calories. I heated the cheese in boiling water first and melted into the potatoes really well.
The flavor was outstanding after that and It was a fairly filling stand alone breakfast.
Also a 2006 era pound cake with Taster's Choice Instant coffee. The pound cake tasted about like a Made in USA Tastee Cake. The texture was a bit grainy. I think the sugar was beginning to slightly crystallize. Again it still sweet and had a strong vanilla flavor .
Good item for dessert.

I've cooked up the hashed browns on a skillet with some extra oil before, definitely much better crispy. I've never thought to dump in the cheese, looks really tasty! Reminds me of au gratin potatoes.

It's my brother's camping knife,

Now that cook's knife looks far more practical, the problem with the one I used was the handle is not user friendly when it is greasy or wet. The blade is razor sharp. I was afraid of cutting myself with it. It is a good knife to pack away when space in at a premium. But a good solid handle is worth it when you are camping, You cut your palm out there then you have a hard time paddling the canoe,. I plan to buy a traditional French Mountaineer folding knife. I think the brand is called Opiline. I have had one before and they are a great field knife for cutting up food and rope.

Fortunately for me [and my budget] that's outta my range and I can justify not getting it since it goes almost 7oz... that's a hunka-chunka cuttin' steel !
BTW the Opinels are great and you can almost always find a really great deal on them over on eBay. I've seen lot-sales of several knives in acceptable shape go for under $20... look for the carbon steel ones. The little bit of extra care is worth it for the quality of the steel.
