Coffee whitener is incredibly flamable. Google "Mythbusters coffee whitener explosion" and watch the video sometime. One of the biggest explosions they've ever detonated on the show was done using coffee whitener and a highway flare. It was incredible.

About the Dairy / Sugar powder.. Just about any dust (if fine enough) will create big flames. Even powdered allumium can do it. The small particles burn very fast, igniting the other particle in a fast tempo.. creating a big (but not so long burning) very hot flame.

There's no way you could off expected it, I'd also be surprised if it happend, because I would figure out it would be damp enough. Glad your extractor didn't caught on fire, they light up quite easily with the grease in them.

I however think that if you mix it after putting it in, and then heating the kettle (to prevent burning powder spills) there shouldn't be a problem.
