Because the Kimchi in the ration is somewhat old. Tasting sour.
I opened this package in Feb. 2009 and this one was manufactured in 2005.
About 4 years passed :) So the color is quite red-brown.

Thanks dirtbag, I'll try to get some kimchi spices from the Asian supermarkets next time I go to Paris.

Do your own spice mix, some Garlic, onion,little bit of ginger, lots of red pepper, some add some sugar, maybe some soy.
BTW, the Asian markets sell red pepper in a bag, its fairly mild, you can add lots... :D
If you can find a korean restaurant, give it a try!

yes, but maybe in Paris, here we have to drive 60 miles to find something like a KFC :lol:

It's quite funny here since I could drive less then a mile and find a store that sells kimchi pre-made in a huge jar for about 5 bucks.
