Actually, minced beef, or what we call ground beef, is what is used to make this dish in a military mess more often than the dried 'chip' beef. Ground beef is far more economical and more readily available. The dried beef used to be used in field kitchens where adequate refrigeration resources may not have been available. If you do a google search on Creamed Beef, you can probably pull up a lot of recipes for SOS, including those using the dried beef. The origins of this dish date back to WWI, as legend has it, was originally made from rib roast that did not arrive in time for supper the previous night.

To address health concerns, this dish can be made these days with ground turkey and the addition of garlic powder or granulated garlic.

That's what I remember as well `MCI. I actually never saw "chipped" beef while I was in the Army. In my Mess Hall experiences all I ever came across was ground beef served as "Creamed Beef on Toast" (for breakfast) or on mashed potatoes (for dinner). I remember one cold morning while deployed in the field on a FTX at Fort Lewis the Mess bringing out mermite cans with nice and hot Creamed Beef for the cold & stale toast they put it on. :x At least they didn't screw up the coffee.

I still love the mashed potatoe version and make it occasionaly for myself (a good hearty camping meal). :P

For the real thing (chipped beef) I can go down to my local Golden Corral restaruant on Saturday & Sunday mornings where they serve it on their buffet line (burp!). Funny thing though is that they never seem to run out. Hmmmmmm....

From at least the early 80's, the Army no longer used the dried, "chipped" beef in the recipe. They used ground beef, instead.

The beef could come raw from big bulk packages or, at least on one occasion that I witnessed when I drew KP detail at FT Benning, the cook crumbled up the leftover cooked hamburger patties from the previous day.

SOS, scrambled eggs, grits with butter, and strong black coffee. A cig to top it off. The perfect breakfast.

I've had it with both ground beef and with dried beef, as well as with some deviations to the recipe. I think the challenge these days is finding the dried/chipped beef. I think Hormel is the only source these days, though in days past, I seem to remember seeing it in the Libby's branding as well. I think the chipped beef version was adapted during WWII for field kitchens when refrigeration would have been an issue. These days, refrigeration isn't that much of an issue when the mess tent might be air-conditioned ;) Refrigeration in field units wasn't even too much of an issue during Viet Nam when they could drop refrigeration units in by helicopter.

These days, I make it with ground beef, onions, a roux, milk, beef soup base, and worchestershire sauce. (slightly, only slightly, healthier version for aging bodies :) ).

As for Golden Corral, we only have two of them in all of California, though the closest one to me is only about 50 miles away.
