Probably the annatto seed colored oil. When they produce cheese products they create a standard "base" mostly white,then if they want to make "cheddar cheese" flavor they simply add coloring, in this case annatto....
That's why the only difference between the commercial white and "yellow"/cheddar cheese slices or products is the coloring.....
