Probably the annatto seed colored oil. When they produce cheese products they create a standard "base" mostly white,then if they want to make "cheddar cheese" flavor they simply add coloring, in this case annatto.... :D

That's why the only difference between the commercial white and "yellow"/cheddar cheese slices or products is the coloring..... :roll:
