Moisture is my issue.

After 30 years, dehydrated apple especially draws in moisture... somehow.

So the apple gets wet aka rehydrated and goes bad weeks afterward.

Need to store in dry ice or something...

I tend to store my Freeze-dried meals in a large plastic air tight container and add a load of moisture absorption sachets in and around the packs, I get them from work (Warehouse)

But tbh I don't think my packs need to be stored in such a manner as I tend to use them pretty quickly when I go hiking.

Also a lot of variety in there too, different manufacturers, most are around 5-8 years shelf life in ideal conditions.
I came, I saw, I ate some rations then fell asleep amongst the clover.
