I guess they did not keep as well as intended, perfectly safe though. We noticed the same thing with the dry creamer packets, but our ever resourceful crew-chief usualy had a jar of dry creamer on board. One of my favorites is still mixing the coffee and cocoa powder (from MREs, no way would I trust MCI stuff by now) with some dry creamer, add boiling water, consume slowly.

Sometimes I take one pouch out of my supply case and mix a fine hot beverage

. I never had a packet where the coffee was hard, it was always powdery

. The spray dried vintage coffee is a thousand times better than the modern freeze dried.
BTW: Here two COFFEE INSTANT TYPE I pouches in comparison (I showed that photo here in another topic before). At the first glance they are similar, but the weight of the contents is different

: Left it is 2,5 grams, right it is 2,2 grams, that is 12 % less with the same amount (8 ounces) of water

. The 2,5 grams pouch was in MCIs and very early MREs, the 2,2 grams packet was in MREs from about 1987-1990. Some note to the first pic of my coffee supply: The left half of the case is filled with 2,2 grams pouches, the right with 2,5 grams pouches
