Having worked in Hialeah, Florida for some time I cannot help but think of a Tortilla as an Omelet.
I have never figured out why they absolutely insisted on cooking them with olive oil instead of butter. I would ask them to use butter, and they would say, "Si!" and then cook it in olive oil. I just filled up on the Cuban bread with guava and cream cheese!

Hi Galloot...
the olive oil gives a distinctive flavor to the omelletes and also to fried eggs....try it!!!
I like them both butter and olive oil, but butter is more cheaper than EVOO (extra virging olive oil)
