I think the condition your referring to when you say "Mold up" is called "Webbing". A white, thread like condition found in the coffee crystals. Its caused by exposure to excessive heat which allows the caffeine to leach out of the crystals. If the coffee is normal in color it should dissolve in hot water and be fine. If the coffee is black and caked together and displaying webbing it will not dissolve.

Ah, very interesting. I would love to get my hands on one of these red packets and take a look at the stuff under a high power microscope to which I have access. It should be fairly evident at the point.

most of what i've found is more green and brown/black clumps, so did not risk trying. But good to know about the webbing, I'll keep that in mind for future info.
