Wheat snack bread - What is that aftertaste?

You all know what I'm talking about.
Some of you might not mind, or may even like it, but I get really disappointed every time I open an MRE and find a wheat snack bread.
I never ever tasted any bread like that before. That pepper-like aftertaste from the wheat snack bread and similar buns based on the same recipe... It's gotta be one of the preservatives in there.
Is there any single ingredient you can point to and say "this is the reason you think it tastes bad".
Searching for "wheat snack bread taste" on this forum is not very useful

haha i get you. only flat breads I've ever had tasted like that. very wheaty

Never been a favorite of mine, always prefer the crackers, but, push comes to shove, something in belly. The only good application is the twin-pack snack bread in the beef patty MRE, so we can make a little American style hamburger.

I always pass on the stuff, can't stand that nasty preservative taste. I much prefer the tortillas, or vegetable crackers.

Perhaps not "ideal" after some of the crap we ate in the field, we'd pretty much eat anything.
That being said to me the snack bread is pretty good! I haven't tried a Canadian IRP but their bread looks pretty good as well.
If there was an "off" flavor I would think maybe improper storage and it was going bad? Stale rancidity?

For me, its a metallic aftertaste. Not sure what the manufacturers put in it but if you put cheese spread or some PB and J, then its not so bad. You just have to mask the taste.

Any of the snack breads were always a let down. I'm not even sure how to describe it, we always just slathered it in the cheese spread to make it edible. You had to utilize every calorie you could get.
