i swear the last package i had said it had soybean oil in it, by the looks of it though it seems that i am wrong. :oops:

Let us remember that "Fat Free" does not mean that there is NO fat. It means that there is less than .5 grams per serving.

To claim that any food product is completely fat free is absurd, there will always be some minute quantity. Therefore the government has set an essentially arbitrary cut-off point, if a "serving" contains less than .5 grams, than it can be labeled as fat free. As is so often the case, the devil is in the details... what constitutes a "serving size?" If you check out the serving sizes for mayonnaise from the site listed below, you will note that serving sizes are somewhat arbitrary. Even lard can be labeled "fat-free" provided that a less than .5 gram serving size is specified.

BTW - I might mention that commercially prepared mayonnaise uses homogenized eggs, has high acidity, and contains preservatives. As a result, salads made with mayo, such as egg or tuna salad, will remain unspoiled longer than the eggs or tuna will without the mayo. Mayonnaise's reputation for spoiling easily comes from homemade mayonnaise not the highly processed variant we are used to.

BTW - I left this out. Eggs have 5 to 7 grams of fat per egg.
