Great pics! The only thing I do not like about the Spanish rations are for the lunch and dinner rations you need to be given the separate pack of crackers (bread) to go with the meal. I always liked the Military standard issue Oakley glasses, you can find them on Ebay quite easily they are ballistic rated and don't fog up that bad. Every pair of ESS ones I had would fog up like crazy and were uncomfortable to me.
Treesuit shoot me a message if you want to part with any of those dessert trays; all the cakes, etc.. I have seen so far in the Polymer trays last at least 4 years I can vouch for that.
mreheater72 is correct, those cakes and cupcakes are designed to be kept frozen and then thawed prior to the meal then served immediately, however some of the newer trays (almond cupcakes only one I know off hand) are shelf stable meaning they can be stored without refrigeration.
Great pics! I also find it odd they do not mix the menu's. But they probably issue them in mass at company level so I bet there are a bunch of cases of each menu so you can pretty much grab whatever menu you like, well hopefully!

I remember that one too pretty good tasting! Been trying to find one of those online for a few but no luck. When I was on active duty I took 3 trays of the Coffee Cake home with me, ate one then could not bring myself to eat the others so I sold them to some surplus store! Wish I had kept them now...

You might could actually bake and sell batches, just an idea... maybe vacuum pack them or somehow seal batches of them in bags?
