Water temperature also plays a big part. Warm water mixes a lot better then cold water. Of course, it being summer now (as long as your a northern hemisphere-ian), you would think your water would naturally be warmer if anything.

I think the condition your referring to when you say "Mold up" is called "Webbing". A white, thread like condition found in the coffee crystals. My guess is that the cheese will not melt. The cheese was the item that was the most difficult to make self stable as it was turning colors on them in a short time so they probably had to load it up with stabilizers which means you could probably hit it with a blow torch and see no change.
